2 tablespoons hemp oil

1 medium onion, minced

¼ cup minced celery

1 teaspoon dry oregano

1 teaspoon dry basil

1 bay leaf

10 ounces fresh shiitake mushrooms, cut into ¼-inch-thick slices

8 ounces fresh baby bella mushrooms, cut into ¼-inch-thick slices

2 large (about 7.5 ounces) portobello mushrooms, cut into ¼-inch-thick slices

4 ounces fresh oyster mushrooms, cut into ¼-inch-thick slices

2 medium cloves garlic, minced

1¼ cups vegetable broth, divided, or as needed

2 tablespoons soy sauce or tamari

2 cups hemp milk, unsweetened, room temperature

½ teaspoon fine-grain sea salt, or to taste ½ teaspoon freshly ground black pepper, or to taste
